Apple Sharlotka

If you’re feeling adventurous this holiday season and want to break free from the usual desserts of Pumpkin and Pecan Pies we’ve got the perfect recipe for you. Introducing the Apple Sharlotka!

If you’ve never tried an Apple Sharlotka, you’re in for a treat. This Russian treat is essentially a healthier cousin to the American Apple Pie. The great thing about this dessert is that it still has those warm, homely tastes of a true holiday treat… Oh, and, it’s really easy to make!

You Will Need:

9-Inch Springform Pan
6 Large Granny Smith Apples, Peeled, and Cored.
1 Cup All-Purpose Flour
1 Cup Sugar
4 Eggs
1 Tbsp Fresh Lemon Juice
¼ Tsp Cinnamon
¼ Tsp Nutmeg
1 Tsp Vanilla Extract
Powdered Sugar, to dust.

1. Preheat your oven to 350°F and grease your springform pan.
2. Chop your prepared apples into quarters and then thinly slice.
3. Add two tablespoons of your sugar and the lemon juice to the apples, mix well and leave to stand for 10 minutes whilst you complete the next step.
4. In a bowl, whisk your eggs with the remaining sugar and vanilla extract until you have a thick mixture in which ribbons form on the surface.
5. Sift together your flour, nutmeg, cinnamon and add a pinch of salt, then fold this mixture gently into the wet mix until just combined.
6. Now take your apples and layer them in your greased pan and pour the batter over the top. Give the mix a few minutes to work its way through to the bottom of your pan, to cover all the apples.
7. Bake for 50-60 minutes until the sharlotka is golden on top and a tester comes out clean.
8. Remove from the oven and allow to sit for 5-10 minutes in the pan, on a rack.
9. Remove the sharlotka from the pan, dust with powdered sugar and serve!
